Frog Facts

  • Macerated Natural — The whole cherries rest in a sealed, temperature-controlled ferment before drying — slower, deeper fruit and more complexity in the cup.
  • Grown at 1550 masl, where cherries ripen slowly and concentrate sugar.
  • Original artwork, painted for this release — a share of every bag returns to the artist.

FES Pacamara Bronze: this is one of the Pacamaras grown on our farm. Pacamara is an unfinished variety — it still displays variations. Some plants look more similar to one of the parents.

The variety, drawn as it grows: Pacamara. Selected on the cupping table before it was ever named for us.

II.The slope

1550 masl

Cerro El Aguila, Santa Ana Region. Worked at 1550 masl — the aspect that decides how slowly the cherry ripens.

III.The process

Process

Macerated Natural. Treated as a design decision, not a tradition — the fermentation is what turns this lot into itself.

IV.The cup

Light–Medium roast

In the cup: Candied Citrus, Orange Cake, Karkade. Orange cake, karkade on the finish, once the coffee has cooled enough to speak.
