Why we roast light.

Every burnt cake tastes the same. That single idea explains more about roast level than any chart we could draw.

A roaster once told us the clearest explanation of roast level we have ever heard, and it had nothing to do with coffee. Bake a cake and you can taste the difference between lemon, almond and carrot. Burn the same three cakes and you can taste only one thing: burnt. Roasting coffee dark does the same job — it replaces whatever the farm grew with a flavour the fire made.

01The burnt cake test

The point of the cake story is not that dark coffee is bad. Plenty of people genuinely enjoy the taste of roast — smoke, cocoa, char, bitterness — the same way people enjoy a well-caught crust on toast. The point is that roast flavour is a flavour of its own, and the further you push it, the more it covers everything underneath.

So a dark roast is a choice about what you want to taste: the roastery. A light roast is a choice to taste the farm — the variety, the altitude, the soil, the fermentation, the specific decisions someone made while the cherry was drying. We buy coffees for those differences. Roasting them dark would be paying for lemon, almond and carrot and serving three plates of burnt.

02What is actually happening inside the bean

Green coffee holds sugars, acids, amino acids and hundreds of aromatic precursors. Heat turns them into flavour in stages. Early on, the Maillard reaction and caramelisation build sweetness, body and the caramel-to-cocoa spectrum. Push further and those same sugars carbonise, the fruit acids break down, and pyrolysis takes over — the reactions that produce ash, smoke and the oily sheen you see on very dark beans.

Light roasting stops in the window where sweetness has developed but the origin character is still intact. Dark roasting keeps going until roast character dominates. Between the two you lose delicacy and gain uniformity: this is why dark roasts from very different countries converge on the same taste, and why blends hide behind them so easily.

03Light does not mean sour, and dark does not mean strong

Two myths worth retiring. The first: light roast is sour. Sourness is a sign of an underdeveloped roast or an under-extracted brew, not of a light one. A properly developed light roast tastes sweet and juicy, the way ripe fruit is acidic without being sharp.

The second: dark roast is stronger. Caffeine is essentially unchanged by roast level. What darker roasts add is bitterness, which the palate reads as strength. Strength in a cup comes from your brew ratio, not from the colour of the bean.

04Light roast is harder, not lazier

A light roast is not a roast cut short. It needs the bean fully developed inside while the surface stays pale, which means controlling charge temperature, airflow and rate of rise second by second. Stop too early and you get grass, hay and sharp acidity. Coast too long and the whole point disappears.

It also removes the hiding place. Dark roasting can flatten a defect, an unevenly dried lot, an old crop. Light roasting shows all of it, so the quality of the green coffee has to be there before we start. We profile each lot separately and cup it before it is allowed on the shelf.

05What that means for what we sell

Our collections change through the year and come from different countries, farms and processes — washed lots, naturals, co-ferments, thermal shock, sugarcane decaf. The one constant is the roast: light enough that each of those decisions is still legible in the cup.

If you have mostly drunk dark coffee, the first light-roasted cup can read as thin until your palate recalibrates. Give it a week, brew it a little stronger than you think you should, and what arrives is not weakness — it is detail.

Roast level is a spectrum, not two camps. Caffeine content per bean is broadly stable across roast levels; perceived 'strength' is a function of bitterness and brew ratio.
