From Shyira washing station in Rwanda, in collaboration with Colombian farm Forest. Colombian cold-water processing, brought to a small experimental lot in Rwanda. Very few bags to share.
At Shyira washing station, coffee cherries are sealed in plastic bags and lowered into a cold lake for 72 hours of anaerobic fermentation. The water keeps the temperature down; the experiment takes its time.
Then, back above water: 30 days drying on raised beds.
