Frog Facts

  • Macerated Natural — The whole cherries rest in a sealed, temperature-controlled ferment before drying — slower, deeper fruit and more complexity in the cup.
  • Grown at 1500 to 1600 masl, where cherries ripen slowly and concentrate sugar.
  • Original artwork, painted for this release — a share of every bag returns to the artist.

Nomen Nescio is an unknown variety that we found growing at Finca El Salvador. It does not get leaf rust. We are putting it in our Hybrida plant breeding program.

The variety, drawn as it grows: Name Unknown. Selected on the cupping table before it was ever named for us.

II.The slope

1500 to 1600 masl

Cerro El Aguila, Santa Ana Region. Worked at 1500 to 1600 masl — the aspect that decides how slowly the cherry ripens.

III.The process

Process

Macerated Natural. Treated as a design decision, not a tradition — the fermentation is what turns this lot into itself.

IV.The cup

Light roast

In the cup: Cranberry, Floral Candy, Sweet Liqueur. Sweet liqueur, cranberry on the finish, once the coffee has cooled enough to speak.
