We roast on electric machines only, powered by 100% green energy. We buy small lots from producers we can name. We pack in one recyclable material and ship in paper. What does not make the shelf gets sold, not binned.
Fewer farms,

We buy small lots directly from a handful of producers and the importers who work alongside them. Every bag names the farm, the producer, the variety, the process and the altitude — not because it is marketing, but because a chain you can name is a chain you can check.
We pay above commodity and above Fairtrade reference levels for the lots we take, and we come back to the same farms season after season. Long relationships are what allow a producer to invest in their own soil, their pickers and their processing.

Electric
only.
We roast on two fully electric machines — a Stronghold, the smart roaster with its three-way heating system of hot air, halogen and drum conduction, and a Link for small development batches and sample roasting. Neither has a burner. There is no gas line in the roastery at all.
Everything runs on 100% green electricity, so the roast itself carries no combustion emissions — the single biggest energy line in most roasteries simply is not there. Electric heating is also far more precise: we can hold a profile to the second and repeat it exactly on the next batch, which means fewer failed roasts and less coffee lost while dialling a lot in.
We roast light and to order, in small batches, following the seasons of each origin. Coffee is roasted because it has been bought, not roasted in the hope that it will be.

One material,
one bin.
Our bags are mono-material and fully recyclable — they go straight into the plastic stream without anyone having to peel a liner off a foil. The valve stays on. Nothing in the parcel needs to be separated by hand.
The label is printed on paper, the boxes are unbleached recycled cardboard, and the tape is paper. Where we can source it close to home — print, packaging, materials — we do.

Short distances,
paper parcels.
In Amsterdam and nearby we deliver ourselves, by bike where the route allows. Everything further goes out as a cardboard parcel with kraft-paper filling — no bubble wrap, no plastic pillows.
We roast to order and ship on the next roast day, so coffee moves once, arrives fresh and does not sit in a warehouse waiting to go stale. Wholesale partners in the city can take coffee in reusable buckets instead of bags.

Too good
to throw away.
Before a coffee is released we roast it several times to find its profile. Some of those test roasts do not make the shelf — they are not flawed, only not final. We keep them, blend them and sell them cheaply rather than bin them.
Chaff and spent grounds leave the roastery as compost and go to growers and gardens around the neighbourhood. If you want a sack for your own soil, ask.
