These are the recipes we return to at the roastery. They are starting points, not laws. Use filtered water, weigh your dose, and taste before you change anything.

Start with just-off-boil water in the base to shorten heat exposure. Fill the basket level — never tamp. Pull off the heat at the first hiss, before the gurgle.

French Press

Pour, stir the crust at 4:00, then skim the foam and grounds. Rest another four minutes, plunge just to the surface, and decant. Clean, sediment-free, and quietly full-bodied.
